Sausage, White Bean and Kale Soup

½ Onion diced
2 Cloves garlic
1 Package organic chicken sausage (or sausage of choice)
1 Quart low sodium vegetable broth
28oz can crushed tomatoes
14oz can diced tomatoes
2 cans white beans (drained and rinsed)
1 bag kale
Season to taste (salt, pepper, turmeric, crushed red pepper)


To make: sauté 1/2 a diced onion for about five minutes, or until it softens. Add 2 cloves minced garlic and sauté another minute. Add 1 package sliced @bilinskisausage organic chicken sausage (or sausage of choice), season with salt, pepper, turmeric, and crushed red pepper flakes, and sauté another minute. Add 1 quart low sodium vegetable broth, 1-28 oz can crushed tomatoes, 1-14 oz can diced tomatoes, and 2 cans drained & rinsed white beans. Stir to combine, bring to a boil, then reduce to a simmer. Let simmer for about 15 minutes to let the flavors marry. When finished cooking, add 1 bag of kale and stir to combine/wilt. Season as desired.
